2 tablespoons olive oil
1 tablespoon butter
6 boneless skinless thin-sliced chicken breast fillets
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
2 cloves garlic, chopped
1 cup water
2 cube chicken bouillon
1/2 cup oil-packed sun-dried tomatoes, drained, roughly chopped
1 cup heavy (whipping) cream
1 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes
1 bag (10 oz each) Birds Eye® Savory Herb Riced Cauliflower
1/2 cup freshly grated Parmesan cheese
1/4 cup thinly sliced fresh basil

Heat oil and butter in a 12-inch skillet over medium-high heat. Season chicken with salt and pepper. Cook chicken until golden brown on both sides, 3 to 5 minutes per side. Remove to a plate.
Add garlic to pan and cook until fragrant, about 30 seconds. Pour in water, and bouillon cubes and stir until dissolved, scraping up any browned bits on the bottom of the pan.
Pour in cream, sundried tomatoes, oregano, and red pepper flakes; bring to a boil. Nestle chicken into the pan, coating it in the sauce. Reduce heat and simmer, uncovered, until chicken is no longer pink in the center (165°F) and sauce is thickened, 7 to 10 minutes.
Microwave cauliflower rice according to package directions. Plate your chicken cutlets. Stir parmesan cheese into sauce and pour sauce over chicken. Garnish with basil and serve your marry me chicken over cauliflower rice.
