3-1/2 cups pumpkin seeds
PAM® Original No-Stick Cooking Spray, divided
3 tablespoons Earth Balance® Original Buttery Spread. melted
1 teaspoon vanilla
1/3 cup firmly packed light brown sugar
1 tablespoon ground cinnamon
1 teaspoon kosher salt

Preheat oven to 300°F and spray baking sheet with cooking spray. Thoroughly wash pumpkin seeds and remove any pumpkin flesh. Lay seeds in a single layer and bake for 30 minutes. Remove from oven and let cool 5 minutes.
Transfer seeds from the baking sheet to a large bowl. Stir in melted Earth Balance, vanilla, brown sugar, cinnamon, and salt until evenly coated.
Pour cinnamon pumpkin seeds back onto baking sheet and bake for 25 minutes. Cool completely and store in an airtight container.
