1-1/2 cups panko breadcrumbs
3 small avocados, pitted, peeled
1/2 teaspoon kosher salt

Heat vegetable oil in a 10-inch nonstick skillet over medium-low heat to 350°F.
Pour cornstarch into a shallow dish, whisk egg and water together in a second shallow dish and pour breadcrumbs into a third shallow dish.
Cut each avocado half into 4 thick slices. Coat slices in cornstarch and shake off the excess. Coat with egg wash followed by breadcrumbs. Place on a plate while you coat the rest of the slices.
Carefully place breaded avocado in hot oil in batches and fry until golden brown on all sides, turning carefully. It should only take about 1-minute total. Remove to a paper towel-lined plate. Sprinkle salt on hot avocado fries. If your oil has burned breadcrumbs in it, try to remove them between batches.
