4 tablespoons butter
1 medium yellow onion, chopped (1-1/2 cups)
3 medium ribs celery, chopped (1 cup)
1/4 cup all-purpose flour
4 cups chicken broth
1/2 cup Swiss Miss® Nonfat Dry Milk
1-1/2 pounds Yukon Gold potatoes (4 large), cut in bite-sized pieces
1 teaspoon salt
1/2 teaspoon ground black pepper

Melt butter in a large saucepan over medium heat. Stir in onion and celery and cook until tender, about 7 minutes, stirring occasionally. Stir in flour and cook 1 minute.
Whisk together chicken broth and dry milk until dissolved. Pour broth, potatoes, salt and pepper into pan; bring to a boil.
Reduce heat and simmer, covered, until potatoes are tender, and soup is thickened, 30 to 40 minutes, stirring occasionally.
Customize your potato soup with ham or bacon cooked in the soup or top each bowl with cheese, green onion and sour cream!
