1-1/2 pounds ground round beef (85% lean)
1-1/2 cups chopped yellow onion
1 cup chopped carrot
1 cup chopped celery
1 tablespoon chopped garlic
2 red-skinned potatoes, chopped (about 1/2 a pound)
1 can (28 oz each) Hunt's® Diced Tomatoes, undrained
4 cups lower sodium beef broth
3 cups water
1/2 cup pearled barley, uncooked
1 bay leaf
2 tablespoons chopped fresh parsley
2 teaspoons salt
1 teaspoon dried thyme leaves
1/2 teaspoon ground black pepper

Cook beef in 5-quart saucepan over medium heat until browned; drain and return to pan. Stir in onion, carrot, celery and garlic and cook until vegetables are softened, about 10 minutes, stirring occasionally.
Stir in all remaining ingredients; bring to a boil. Reduce heat and simmer, covered, until vegetables and barley are tender, about 40 minutes, stirring occasionally. Remove bay leaf before serving.
