4 wooden skewers
2 teaspoons lemon zest, divided
4 tablespoons lemon juice, divided
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon dried oregano
3 tablespoons avocado oil
1 pound chicken breast, cut into 1-inch pieces
1/2 English cucumber, shredded (about 1-1/2 cups)
1 cup plain Greek yogurt
1 clove garlic, finely chopped
1 tablespoon chopped fresh mint
1 tablespoon chopped fresh dill

Place wooden skewers in cold water to soak. Whisk together 1 teaspoon lemon zest, 3 tablespoons lemon juice, salt, pepper, oregano and avocado oil in small bowl. Place chicken in a resealable food storage bag. Pour marinade over chicken, seal bag and toss to coat. Refrigerate 30 minutes.
Place shredded cucumber on a clean kitchen towel, wrap it up tightly and wring out as much water as you can. Stir together shredded cucumber, yogurt, garlic, mint and dill in medium bowl; refrigerate tzatziki sauce until ready to serve.
Spray cold grates of gas grill with avocado oil spray; preheat to medium heat. Thread chicken evenly onto skewers. Grill until lightly charred on all sides and cooked through (165°F), 12 to 15 minutes, turning occasionally. Remove from grill and keep warm.
Microwave cauliflower rice according to package directions. Pour into large bowl and stir in remaining 1 teaspoon lemon zest, 1 tablespoon lemon juice, cherry tomatoes, cucumber, red onion and feta. Serve keto lemon chicken over cauliflower rice with tzatziki sauce. Garnish with additional fresh herbs, if desired.
