1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano
PAM® Original No-Stick Cooking Spray
1 pound boneless skinless chicken thighs, cut in bite-sized pieces
1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
1 can (15 oz each) Rosarita® Premium Whole Black Beans, drained, rinsed
1/2 cup chopped red onion
2 cups chicken broth
2 cups Jasmine rice
2 large avocado, pitted, peeled
1 pouch (4.5 oz each) Frontera® Original Guacamole Mix
2 tablespoons lime juice
2 tablespoons fresh cilantro
1-1/2 cups shredded Mexican blend cheese

Stir together chili powder, cumin, salt and oregano in small bowl. Spray inside of 6-quart electric multicooker pot with cooking spray and select sauté function. Season chicken thighs with spice mixture and add to pot. Cook until browned, about 8 minutes, stirring occasionally.
Turn multicooker off. Pour undrained tomatoes, beans, red onion, broth and rice into pot. Lock lid in place and close pressure release valve. Select low pressure cook function and set the timer for 9 minutes.
Prepare guacamole according to package directions. When time is up on multicooker, carefully open valve to quick release steam.
Carefully remove lid. It’s okay if the rice still looks a little dry at this point. Stir in lime juice and cilantro. Cover pot with a dry towel and let it sit for about 5 minutes to let rice finish cooking.
Scoop burrito mixture into serving bowls and serve the chicken burrito bowls with guacamole, cheese, salsa and sour cream, if desired.
Be sure to select low pressure function for this meal to ensure that your rice does not over cook
