2 teaspoons dried thyme leaves
1 teaspoon ground black pepper
1 teaspoon dried basil
1 teaspoon curry powder
1 teaspoon ground cumin
1 teaspoon garlic powder
1/4 teaspoon salt
2 large egg whites
1-1/4 cups lowfat buttermilk
6 boneless skinless chicken breasts or thighs

Preheat oven to 450°F. Spray a large baking sheet with cooking spray.
Stir together crushed crackers and spices in shallow dish. Whisk together egg whites and buttermilk in second shallow dish.
Dip each piece of chicken in buttermilk mixture then roll in cracker mixture, coating well. Press lose crumbs into the meat. Place on baking sheet.
Bake 20 to 25 minutes or until golden brown (165°F), turning one halfway through baking.
